That’s the one major thing about trying to avoid fat… fat is the only thing that melts properly. You leave fat out of things like cheese, butter and chocolate and you get non-melty substances that have to rely too heavily on sweetening agents, which causes them to have weird texture and an unpleasantly lingering aftertaste.

I say, just buy some Ghirardeli brownie mix and watch Galaxy Quest!
